No-Bake Cheesecake

No-bake cheesecake gives you the creamy, tangy appeal of the baked version without the oven, the water bath or the waiting. It sets in the fridge, it never cracks, and it is the ideal dessert when you need something impressive that can be made a day ahead.

How it sets

Instead of eggs and heat, a no-bake cheesecake relies on chilling and a setting agent. The two common approaches are:

  • Gelatine — dissolved in warm water and stirred into the batter for a firm, sliceable set
  • Whipped cream and chilling — a lighter set, softer and more mousse-like

Both work; gelatine gives a cleaner slice, whipped cream gives a lighter texture.

Ingredients (serves 8)

Base

  • 200 g biscuits, crushed
  • 80 g butter, melted

Filling

  • 500 g full-fat cream cheese, room temperature
  • 100 g caster sugar
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 250 ml double cream, whipped to soft peaks
  • 2 teaspoons powdered gelatine, bloomed in 3 tablespoons water (optional, for a firmer set)

Method

  1. Mix the biscuits and butter, press into the tin and chill for 20 minutes.
  2. Beat the cream cheese, sugar, vanilla and lemon juice until smooth.
  3. If using gelatine, warm the bloomed gelatine gently until dissolved, cool slightly, then beat into the cheese mixture.
  4. Fold in the whipped cream.
  5. Spoon over the chilled base, smooth the top and refrigerate for at least 4 hours, ideally overnight.

Why it sometimes stays soft

The usual cause is under-chilling or not enough setting agent. Four hours is a minimum rather than a target; overnight is better. In warm weather, add the gelatine. Also check your cream cheese is full-fat — light versions set less reliably.

Flavour variations

  • Swirl in fruit purée or lemon curd before chilling
  • Add melted chocolate to the batter for a chocolate version
  • Top with fresh berries and a dusting of icing sugar
