Halloumi is a semi-hard, brined cheese traditionally made from a blend of goat’s and sheep’s milk, and now often from cow’s milk too. It originates in Cyprus, where it has been made for centuries and carries a protected designation. Its defining feature is a high melting point, which comes from the way the curd is cooked and the cheese is stored in brine.

Why halloumi doesn’t melt

During making, halloumi’s curds are heated to a high temperature before pressing, which alters the protein structure so that it stays firm when cooked. The result is a cheese that can be fried, grilled or baked and will brown on the outside while keeping a firm, springy, “squeaky” bite inside.

What halloumi tastes like

Halloumi is salty, milky and firm, with a rubbery texture when raw and a satisfying squeak when bitten. The flavour is mild, so it takes on the flavour of whatever you cook it with. It is often flavoured with mint.
